Caractéristiques physico-chimiques et biochimiques des trois variétés de poudre de datte (Ghars, Deglet-Nour et Mech-Degla) cultivé à la region de Ziban.

Abstract

Abstract This work is based on the physico-chemical and biochemical properties of three types of date seedling powder Ghars, Deglet-Nour and Mech-Degla, which are divided into three categories of dates respectively soft, semi-dry and dry. The results showed that the humidity and reference sugars are Deglet-Nour. The date powder of the Ghars quality has the highest value of acidity. As for the percentage of ash, we find it high when the powder passes Deglet-Nour and Mech-Degla. We also find that the increase for sugars at the powder of the type of Deglet-Nour on the rest of the species.ملخص هذا العمل يرتكز على الخصائص الفيزيوكيميائيه والكيموحيويه لثلاثة أنواع من مسحوق التمر غرس، دقلة نور، ومش دقلة، التي تنقسم إلى ثلاث فئات من التمور على التوالي لينة، شبه جافة وجافة، أظهرت النتائج أن نسبة الرطوبة والسكريات المرجعية مرتفعة عند مسحوق التمر من نوع دقلة نور.مسحوق التمر من نوعية غرس له أعلى قيمة من الحموضة. أما نسبة الرماد فنجدها مرتفعة عند مسحوق تمر دقلة نور ومش دقلة. كما نجد أن إرتفاع في كمية السكريات الكلية عند المسحوق من نوع دقلة نور على باقي الأنواع.
