Abstract: The objectives of our work are to identify and highlight the activity of extracellular hydrolase enzymes from mold isolated from the extreme middle (thermal source).The cultures of the samples on PDA medium are permitting to isolate nine different strains of filamentous fungi are divided into 4 different genera: Aspergillus, Penicillium, Trichophyton, and Bipolaris. The strains tested presented four activities on the 5 sought ones, the most remarkable being the proteolytic and amylolytic activity with the 9 strains (100%) producing gelatinases and amylases and a significant activity of cellulase (89%) with 8 strains. Thus these molds showed a considerable proteolytic activity 56% producing caseinases. Keywords: mold, thermal source, hydrolase activity, extracellular enzyme.
