Abstract: The charcoal grilled meat street vended is an important source for the satisfaction of food needs but it can be a source of foodborne illness for the consumer. This study was conducted on 12 samples of two types of grilled meat (chicken and mutton) randomly collected in the city of Biskra for the purpose of performing a pH analysis and a bacteriological study to assess the existence and prevalence of different contaminating bacteria. The results of the pH analysis show normal pH values between 6.66 and 7.35. The bacteriological analyzes show values belong to the standards for total coliforms and Fecal coliforms, 75% of grilled meat is satisfactory for the presence of salmonella, a total absence of E. coli and Staphylococcus aureus in this study, and also the detection of germs: Aeromonas hydrophila, Enterobacter cloacae, Citrobacter braakii and Staphylococcus xylosus with different prevalences.
